3 medium garlic cloves, finely minced (about 1 tablespoon)
1/4 cup extra virgin olive oil
1/4 cup fresh juice from about 2 lemons
1 teaspoon smoked Spanish paprika
1/2 teaspoon freshly ground black pepper
2kg fresh sardines, cleaned, scaled, and gutted
Fine sea salt, or Kosher salt
2 tablespoons chopped fresh parsley
Lemon wedges, for serving


1. Combine garlic, oil, juice, paprika, black pepper in a bowl whisk to combine
2. Arrange sardines in single layer on the bottom of a shallow baking dish
3. Pour marinade over the fish, turn fish to ensure coated evenly
4. Spoon some marinade into the cavity of each fish marinate for 30 minutes
5. Preheat grill or barbecue on highest heat setting cover and preheat 10 minutes
6. Clean and oil grilling grate
7. Remove sardines from marinade and grill until well charred 2-3 minutes
8. Using a metal spatula or fish turner, flip sardines over
9. Grill until charred and cooked through, about 2 minutes longer
10. Transfer sardines to a large platter and season with salt
11. Garnish with chopped parsley and serve with lemon wedges
