Ingredients

500g  Cod Fillets
1/2  small jar Red Pesto
50g fresh Breadcrumbs
A little Olive Oil
Salt and Black Pepper
1 Zucchini
1 medium Eggplant
1 Red Capsicum
1 medium size Red Onion
4 sprigs of Rosemary

Instructions

1. Place cod fillets on a lightly oiled baking tray
2. Spread a layer of red pesto over top of each fillet
3. Place a layer of salt and pepper seasoned breadcrumbs
4. Lightly pat the crumb into the pesto
5. Cover with cling film refrigerate until ready to cook
6. Wash pepper, courgette and aubergine and into a rough 1 inch dice
7. Peel red onion and cut into 6 wedges per onion
8. Place courgette, aubergine, pepper and red onion into a roasting tray
9. Pluck green parts of the rosemary and add to the vegetables
10. Drizzle with a little olive oil, season with black pepper and salt
11. Toss the vegetables around until coated with oil
12. Cover with cling film and refrigerate until ready to cook
13. When ready to cook - preheat the oven to 190°c
14. Roast vegetables 30 - 40 minutes giving a quick jiggle halfway through cooking
15. Fish can be baked in same oven at same temperature only needs 15 -18 minutes
16. Serve onto warm plates garnish with a few rocket leaves and a wedge of lemon
